Rhubarb Coffee Cake
| 1 1⁄2 | c | Sugar |
| 1 1⁄2 | c | Shortening |
| 1 | Egg (beaten) | |
| 2 | c | Flour |
| 1⁄2 | t | Salt |
| 1 | t | Baking Soda |
| 1 | c | Buttermilk |
| 1 | t | Vanilla |
| 2 | c | Rhubarb (cut) |
| 1 | Topping |
Cream butter, sugar, and egg
sift flour and salt
Mix soada into buttermilk
Add flour alternately with buttermilk/soda mixture to creamed mixture
Blend well
Add vanilla and blend again
Fold in rhubarb
place in greased and floured 9"x13" baking pan
Sprinkle on topping and bake for 40 minutes at 350-degrees
Topping
3/4 cup sugar
1 1/2 tbsp flour
1/4 tsp cinnamon
2 tbsp butter
mix together with hands until blended and coarse.
